It's a foodie day


It's been awful trying to find the time to cook lately. So, I've been trying to find easy and delicious recipes that Jake and I can make (or sometimes that Jake can make himself). This aged cheddar and apple melt from She Eats Bears looks incredible and is going to be added to our repertoire. We've also been eating quite a few pizzas and this lemony zucchini pizza tops my list. I've actually made it with fresh ricotta from our local cheese shop and it's amazing. Any suggestions for easy meals out there?

avocado, bacon, mozzarella, and a little mayo or (greek yogurt + lemon juice + onion salt)... preferably on a darker bread, toasted. My all-time favorite sandwich!

I can never get enough baba ghanoush... today we had a lunch of fresh baba ghanoush, with a variety of fresh veggies we had laying around: kohlrabi, cukes, peppers, and some tortilla chips. Never gets old!

Mark Bittman's veggie/bean burgers are really easy (if you have a food processor) and you can make bunches just as easily and freeze them. I am apparently totally ready to be a suburban mom!

By the way, that glimpse at your new invite designs is stunning - can't wait to see all the new work!

Susan, so yummy. I haven't made baba ghanoush before, so this might be fun.

Maggie, I love my food processor and I love things that are freezable. Totally going to look these up. And hoping to debut the new work soon!

we've been making this lemon butter sauce for pasta that is amazing, and you can use any veggies/cheese in it. it's just olive oil, butter, lemon zest, and the juice of 2 lemons. so goooooood.

nutella ravioli are always good for dessert.

i love making simple spanish salads. raw onion, lettuce, olive oil, vinegar, and some sea salt. makes my mouth water.
